Homemade Potato Chips

 

Recently i got a mandoline and i have no idea how i lived without this thing.  I love it.  One of the first things i did was to make these potato chips.  Again so easy and delicious.  You don’t have to use a mandoline you can use a cheese slicer or even a food processor.  It’s just a mandoline gets you the very thin slices.

I also recommend using a cookie rack to bake these on vs. putting directly on a baking pan.  I think they more evenly and also you do not have to flip them.

The best thing is you can use any seasoning you want.  If you only want salt that is great.  If you like your Hidden Valley Ranch Seasoning then just add that to the chips before and/or afterwards and they are just delicious.

Homemade Potato Chips

Yield: 6 cups

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

2 pounds potatoes
1/4 cup olive oil
Seasoning or Hidden Valley Ranch Seasoning

Directions:

Preheat oven to 400° F. Using a mandoline, vegetable peeler or food processor, shave potatoes into very thin slices. Dip them into water to get the starch away. Then let them dry on a paper towel. Lay slices onto a cookie rack with a baking sheet underneath. Brush lightly with olive oil on both sides and sprinkle lightly with seasoning.

Bake at 400° F for 15-20 minutes or until potatoes start to turn golden brown and crisp. Remove from oven and season again. Cool slightly and serve warm or cool completely and store in airtight container.
