Garlic and Herb Dip

I am not a big chips person however when i do get chips i by Kettle Brand Potato Chips.  For many reasons one of the big ones is that it remind me of the kind of chips i grew up with in Sweden.  They looked exactly like this.  My favorite Kettle Brand Potato Chip flavor is Salt & Fresh Ground Pepper and again that has been the case every since i was a kid.

The Biscoff cookie is a Belgian “cinnamon” cookie that was first introduced in the US on Delta flights, i used to love them.  Today you can find Biscoff as a spread, is comes in creamy and crunchy options.  Imagine those delicious cookies into a delicious creamy spread.  My favorite is the creamy.  Just like peanut butter I prefer the creamy.

Summer is my favorite time of the year. We basically move our kitchen outside and just use the grill, there is just something about grilling and eating outside that makes the food taste so much better.

But while you are outside you need something to keep you cool, or your guest cool. This is why today I am sharing with you this amazing Watermelon and Cucumber Mojito. It’s easy, refreshing and just delicious. I think it might just be my new favorite summer drink!

Greek Hummus

I hope everyone had a good 4th of July weekend.  I love this time of the year, the warm weather, and lots of eating outside.  Summer is my favorite time of the year.   We use the grill almost 99% of the time during the summer, and one of my favorite summer dishes are kebabs.  They are simple and quick and delicious.  I love to have chicken kebabs, with pita and some home made hummus.   am a huge hummus fan.  I use it as a spreadable on my sandwiches instead of butter.  I also eat it just as a dip with crackers or vegetables.  But my favorite way is chicken and pita.  Hummus is so easy to make at home instead of store brought that is using pesticides or other none healthy ingredients.  It takes less than 10 minutes to put together.

How often do you take time to enjoy the little things in life? I know that with everyone’s busy life it is hard.  But always remember to celebrate the small moments. If it is just a quick hand written note as a thank you or birthday card.  Bring some food over to a neighbor or bring someone flowers.   All those things are so much appreciated.

I am participating in Olivari’s Olive Oil “One year of little” campaign.  They are taking time to remind their fans and consumers that “the little things are everything.”

Today I also wanted to share with you a little recipe, but a powerful one.  When I say powerful I mean nutritionally. With all the processed food and chemicals we put in our bodies, I totally believe we need to eat the small things that matter the most to our bodies.  So this is where kale comes in place.

I love strawberry daiquiri’s made with fresh sweet strawberries.  Reminds me sitting on a beach listening to the waves.  Strawberry daiquiri’s are so easy to make and I wanted to share this simple and delicious recipe with you. This recipes is the classic citrus-flavored cocktail.  Ripe strawberries are sweet enough, so there isn’t any added sugar here.  However, if yours aren’t quite ripe you can still indulge in a daiquiri. Just add a little simple syrup to amp up the sweetness.

If you are having a BBQ this summer, just make a big jug of this and I bet you it will be gone in minutes.

I am a huge fan of a good Sangria. It can’t be too sweet, or to sour or too much of anything. It just has to have a right balance.

The classic Sangria is most commonly made with red wine. Sangria translates to “bloody” which describes the rich color of the alcoholic fruit punch. However, there is no one recipe for authentic Sangria. If you google Sangria you will get hundrets of recipes and one is different from the other. You can make it as strong or sweet as you like.

Baked Eggplant Parmesan

Before i start writing this, i have to say that taking picture of this dish and making it look appetizing was very hard. This dish was so much better than it looks. I tried plating it, and all different things, at the end i just went rustic. The point is it is delicious.

I love a good chicken Parmesan but I got some eggplant in my CSA box this week and needed to do something with it.  I like eggplant but I don’t love it. There are certain preparations of eggplant that I just do not like.  But this was delicious and very easy to make too.  This is one of those dishes you can make a big batch of and eat leftovers for 2-3 days.  Would go great with some whole wheat pasta.

Italian Black Bean Soup

Italian Black Bean Soup

Happy Cinco de Mayo!  I really didn’t do anything to celebrate except relax. This weekend we hit 80F in Seattle, it was just gorgeous!

As usual Sunday was my cooking day, and I made this delicious Italian Black Bean Soup.  I know I am crazy but I still love my soups during hot days, and the spicier the better.
