Recently i got a mandoline and i have no idea how i lived without this thing. I love it. One of the first things i did was to make these potato chips. Again so easy and delicious. You don’t have to use a mandoline you can use a cheese slicer or even a food processor. It’s just a mandoline gets you the very thin slices.

Even if i am not a big coffee drinker i love Irish Coffee, and it’s also great drinking cold, just harder to mix the sugar in. You can always use honey as a substitute.
When it comes to Irish coffee there are some pretty strict rules out there on how to make it and how it is presented. I am sure that an Iced Irish Coffee is against the rules. But also some folks say that the cream should not be whipped either, but really it is up to you how you want to drink it.

Happy March everyone! Time is just flying away but spring is almost here. I can see all the spring flowers coming up. I am not a winter fan at all.
As all of you know i am a mom but I also work full time. What that means to me is that i cook most of my meals on Sundays for the week, i also prepare lunches and breakfasts for everyone the night before, this is so my mornings, are as smooth as possible and i can sleep as long as possible too. All i have to worry about in the morning is to shower and get dressed, then we can sit at the breakfast table and eat. Once we are done, just pick up the little bags in the refrigerator and out we go. Bags are all packed the night before. When I come home at night it is just to turn on the oven, or the stove and heat up one of the dishes what was prepared on Sunday, make a salad and sit down and eat. Dinner is prepared in less than 30 minutes and i get the extra time to go out with my daughter and also walk the dog.

Happy Valentines Day! I am not a big Valentine’s person, i believe we should celebrate love everyday. However, on Valentine’s day i like to give a few cards out, and share a cocktail or two with the loved ones. White Russian’s are some of my favorite dessert drinks! Have you tried to flavor it with International Delight? Sooo good!

Imagine a bar that is chewy with layers of shortbread, chocolate, coconut, and caramel – well this is the bar. It is delicious and rich too. I was looking for a recipe to include my favorite girl scout cookie which is Samoas and i wanted to replicate the Samoas into the bar, and this is the bar that i created.

Where has the time gone, it’s already February. . .i guess that is what happens when you have a little one. Soon to be one!
This is the third year of Delishhh and I have had a blast! It has been so much fun writing and creating this blog and there is more to come. Love mousse, but real mouse is made with raw eggs but many will not eat it because for raw egg. Today there are many other ways of making mousse without raw eggs and this is a very simple and easy way of first making custard and then mixing it and refrigerating it. This Chocolate Kahlua Mousse is so simple and delicious. The only issue is that you have to pretty much make this the night before.

I am back, yes I just decided to take a little holiday break from blogging. It was a very busy holiday season but I am all refreshed and ready to start the new year.

A few weeks ago i wanted to make new pumpkin dessert that was not pumpkin pie. I came across this No-Bake Chocolate Bottom Pumpkin Pie and i knew i had to make it. It is very simple, and it comes out of the Unofficial Harry Potter Cookbook. I never thought i would make a Harry Potter recipes but this tart was awesome. And the crust was amazing, i have since used the crust for many other tarts. It is now my favorite tart crust.
